What Jain catering excludes beyond meat: nothing that grew under the soil

A Jain order is vegetarian, and vegetarian is the easy half of it. The part that catches kitchens is the root vegetables. Observant Jains eat nothing pulled out of the ground: no onion, no garlic, no potato, no carrot, no beetroot, no radish, no ginger root.

That one rule changes the recipe rather than the menu. Onion and garlic are the base under almost every savory restaurant sauce, so they cannot be lifted back out at the end. The dish has to start without them.

So a vegetarian tray is not a Jain tray. Take the format and the sizing from vegetarian catering, then hand the kitchen the roots as a separate instruction.

How to order Jain catering from an Indian kitchen: ask for the Jain menu, not for a list of exclusions

Indian kitchens already know the word. Jain is a standard request on Indian menus, and plenty of caterers keep Jain versions of dishes they cook every day: dal built without an onion base, Jain pav bhaji, samosas filled with raw banana in place of potato.

So make the word the ask. Request the Jain menu and a kitchen that cooks it hands back dishes it already makes. Read out a list of banned ingredients instead and you get a guess, which arrives as plain rice and a salad.

What changes from one Jain colleague to the next: eggs, honey, and the stricter weeks

Jain practice is not one setting. Most observant Jains skip eggs, many leave out honey, and some also avoid mushrooms and fermented foods. During Paryushan, the annual period of fasting and reflection, the list runs longer, and some people eat only before sunset.

None of that is yours to guess at. One message to the colleague, asking what they leave out, settles it before you book. Ordering to an invented strictest version is its own wrong answer.

How to put a Jain option on a mixed office lunch: label the ingredient, not the diet

One Jain colleague does not mean converting the whole lunch. Order two or three no-onion, no-garlic dishes as items of their own and let the room eat them too. A dal cooked without onion is still a dal.

Then label by ingredient. A V or VG marker answers a different question, and neither says whether there is potato in the dish. Put no onion, no garlic, no potato on the card, and nobody has to interview the caterer.
