What Arab American Heritage Month catering looks like: one table, set down all at once
An Arab table does not come out in courses. Everything lands at once and people reach across each other. That is a mezze spread, and it is the easiest format an office can host: no line, no carving, no server.
It also waits well. Hummus, mutabbal, muhammara, labneh, tabbouleh, fattoush, warak enab, and kibbeh all eat the way they arrive, so nothing needs a chafer and nothing gets worse while a meeting runs long.
Most of it is vegetarian already, a good share vegan, and the bread is the only gluten on the table. Nobody has to order twice.
