How to set up an office buffet line: salad first, mains last
A buffet has an order of operations. Plates at the head of the table on their own, so nobody sorts cutlery while forty people wait. Then salad, sides, and mains nearest the seats.
Salad first is the position worth defending. It is the quickest pan on the line, one pull with tongs, and it claims plate space before anyone reaches the protein. Put it last and people arrive with a full plate and skip it.
Two details beat the menu for speed. Sauces and labels sit at the pan they belong to, never clustered at the end, because a cluster is a second line. And one utensil per pan: a shared spoon stops both.
