Why breakfast tacos hold through a late start: the tortilla is the insulation, the foil is the lid
Morning catering gets delivered early and eaten late. The driver comes at 7:45 for an 8:30 meeting that opens at 9:00.
A breakfast taco is built for that gap. The tortilla sits between the filling and the room, and foil closes the rest, so heat stays inside the bundle instead of lifting off a pan. A taco unwrapped half an hour late still eats like breakfast.
Austin worked this out first, and the convention travels with the people who grew up on it. A Bay Area partner of ours moved west, missed them, and started a breakfast taco company.
