Catering for 30 people in a meeting room: boxes at the seats
Thirty people is the size where the room decides the format before the menu does. A conference room with one long table and chairs all the way round has no free wall for a serving line. Guests queue behind the chairs of those already eating, and the agenda waits. Boxed meals set at each seat, or passed out at the door, keep the table clear for the meeting.
The same 30 people in a break room or an open kitchen are a different case. A counter along one wall is a serving line waiting to happen, and trays or pans there turn lunch into a short social break. If the meal is the reason for the gathering, use the counter. If the meeting is the reason, use the boxes.
