How to choose between stationary and passed appetizers: trays that sit versus trays that walk
Appetizers are a service model before they are a menu. The same bites behave differently depending on whether the tray sits still or walks the room.
Stationary service puts everything on one table and lets people help themselves. No staff cost, and it feeds a group fast, with one side effect: the table becomes the center of gravity and the far corner stays empty.
Passed service sends staff around with trays. It sets the pace and reaches people who never cross a room for food, but it needs hired hands and a staging corner. Offices rarely need it, apart from a client-facing reception where guests should be circulating, not queueing.
