Why one buffet line stops working past 75 people: the 23-minute wall
The buffet rule for big rooms is one line per 75 people, and the calculator shows why. At 75 guests a single line takes about 23 minutes to serve everyone from one side. At 76 the order splits into two lines, and the wait drops to about 12 minutes. The food barely changes. The serving time halves.
So catering for 100 people has two workable shapes: boxed meals, or a buffet split into two stations. One long table for 100 is the plan to drop. From one side it would take about half an hour, and lunch turns into a queue.
