Why a taco bar is the default Mexican catering order for an office
A taco bar is what most offices land on, and the reason is arithmetic more than taste. One order feeds a room where three people are vegetarian, two avoid dairy, and everyone wants a different amount of heat.
The build is consistent:
- Two proteins held hot. Carnitas or carne asada beside chicken tinga is the common pair.
- Both tortillas, corn and flour, warmed and wrapped.
- The topping rail: rice, beans, cheese, shredded cabbage, pico de gallo, crema, two salsas at different heat levels, limes and cilantro.
