How BBQ catering is sold: by the pound, or per person
BBQ is unusual among catering cuisines: you can buy it two entirely different ways, and the quote depends on which one you asked for.
By the pound. Meat by weight, sides by the pan, bread and sauce added on. You assemble the order, and the portioning risk is yours.
Per person. A set package: two proteins, a fixed number of sides, bread and sauce. Easier to get approved, easier to compare across quotes, and the caterer owns the math.
The same arithmetic sits under both. Figure a third of a pound of cooked meat per person at a buffet with two or more protein choices, closer to a half pound when BBQ is the entire meal.
