How to pick vegetarian catering dishes people choose on purpose: order by reputation, not by substitution
The vegetarian tray that comes back full was ordered wrong. Somebody took the menu, pulled the meat out, and sent through what was left: plain pasta, roasted vegetables, a hummus wrap. Nobody picks that, least of all the vegetarians, who have been handed it at every job.
Order dishes with a reputation of their own instead. Eggplant parmesan, palak paneer, a mushroom and poblano taco, halloumi off a grill. The test is whether anyone would choose the dish with the chicken still available.
Indian catering has the deepest bench for it. About half the menu is meatless before anyone asks, and a paneer or chickpea curry eats like a main course.
