How to plan sales kickoff catering: food is pacing equipment, not hospitality
A sales kickoff runs on energy management. Long days, early starts, high emotion. Food is there to hold the room’s pace, not to be nice.
Sketch the arc before you order. Breakfast has to be a real meal, because half the room skipped one to make the opening session. Lunch has to land light enough that the 2pm breakout still has a pulse, so lean protein, vegetables, and grains beat pasta trays and fried platters. Then something mid-afternoon, when the room drops.
