A sushi buffet is a sorting problem before it is a menu. Some sushi is built to sit on an open tray for the length of an office lunch. The rest is not.
Cooked and vegetable rolls carry the order. California, shrimp tempura, cucumber, and avocado hold their shape, and they are what a cautious eater takes from a shared platter without asking anybody. Nigiri and sashimi are the first pieces to look tired, and the last thing an unsure colleague reaches for.
So build roll-forward, and keep nigiri to one chef’s-choice tray instead of a second centerpiece. Japanese catering sets the holding window for raw fish and the per-person piece counts.
