Most people know Zaxby’s for one thing: hand-breaded Chicken Fingerz with Zax Sauce. The Zaxby’s catering menu has a platter of those, and it has a second side that gets less attention. Next to the chicken platters sit four Zalad platters, each one a tray of salad sized for the same room.

We read the catering sections at every storefront on the brand’s ordering site, then opened each Zalad platter’s order form at every storefront that lists one. The pattern held almost everywhere. The Zalad platters are where the Zaxby’s catering menu carries its choices. One Zalad platter can carry fried Chicken Fingerz, Grilled Fillets or both, five dressings, and a second platter of Texas Toast or egg rolls.

That makes a Zaxby’s order easy to plan for a mixed office. The chicken platters bring the food people come for. A Zalad platter beside them covers the guest who wants grilled chicken, the guest who wants no chicken, and the guest who wants a different dressing.

Four Catering Sections on Nearly Every Storefront

Zaxby’s lists its catering menu in four sections: Platters, Zalad Platters, Boxed Lunches, and Sides, Desserts, Sauces and Drinks. You place the order online, from the storefront nearest the office. The ordering system behind that menu lists 1,029 storefronts. Every one carries the Platters and the Sides section, 1,019 carry all four sections, and 1,018 carry all four Zalad platters.

Each catering item’s description reads the same at every storefront that lists it, down to the line that says how many it serves.

The Sides section holds the extras: Texas Toast, Tater Chips and Veggie Egg Roll platters, coleslaw, a Cookie Platter, gallons of tea and lemonade, and extra Zax Sauce. The Platters section also holds two Zax Packz, a smaller bundle of 20 Chicken Fingerz or 30 Boneless Wings with Tater Chips, four slices of Texas Toast and four dipping sauces.

The Zalad Platters Carry the Choices

Read the chicken platters and the Zalad platters side by side and the difference shows. A chicken platter is a fixed tray: breaded fingers or wings, with a sauce to pick. A Zalad platter asks more questions, and each answer lets the tray serve a different guest.

There are four Zalad platters. Three of them carry chicken, and the order form asks how you want it cooked. One carries none. All four open five dressing choices, and all four bring a second platter with them.

So the planning rule is short. Choose the chicken platters for flavor, and let a Zalad platter carry the choices. That is the strength of a Zaxby’s order for an office: a chicken-fingers brand built a salad side, so one order can cover the whole room.

Fried, Grilled or Both: The Chicken Setting

The House, Cobb and Asian Zensation Zalad platters each ask the same question, Choose Your Chicken. The form offers three answers: Chicken Fingerz and Grilled Fillets, All Chicken Fingerz, or All Grilled Fillets. The brand’s own description puts it in two words: “Fried and/or Grilled Chicken.”

We opened all three platters at every storefront that lists them. The House and Cobb platters offer all three settings at 1,022 of 1,024 storefronts, and the Asian Zensation at 1,018 of 1,019. At the few others, the form offers two of the three.

The setting matters because the rest of the catering menu is breaded. Every chicken platter, Zampler and Zax Pack carries Chicken Fingerz, Nibblerz or wings. Outside the Zalads, the catering sections carry grilled chicken on one item, the Grilled Chicken Sandwich boxed lunch. If your room has guests who want grilled chicken, the Zalad platter is where you order it, and the both setting lets one tray serve those guests and the fried-chicken fans together.

The Garden Zalad: The Platter With No Chicken

The Garden Zalad Platter is the House build without the chicken. It carries mixed greens, carrots, red cabbage, Cheddar Jack cheese, cucumbers, tomatoes and fried onions, with the same five dressing choices and the same Texas Toast Platter. Its order form has no chicken question at any of the 1,023 storefronts that list it.

For a room where some guests skip chicken, the Garden is the one platter on this menu with no chicken. Read that as a description of the tray. If a guest follows a specific diet, ask the restaurant about the dressings, the cheese and the fried onions before you order.

Five Dressings on Every Zalad Platter

Each Zalad platter’s order form opens five dressing choices, one after another: First Dressing, Second Dressing and so on to Fifth. Every Zalad platter we opened carries all five.

On the House, Cobb and Garden platters, the choices are Ranch, Honey Mustard, Blue Cheese, Lite Vinaigrette and Citrus Vinaigrette. At 733 of the 1,024 storefronts, Citrus Vinaigrette is on all five lists; at most of the rest, it is on the fifth. On the Asian Zensation platter, Citrus Vinaigrette leads all five lists, because it is the dressing the brand pairs with that salad. Every list also has a No Dressing choice.

Five choices is room enough to give every taste in the room a cup. For a mixed table, try one Ranch, one Honey Mustard, one Blue Cheese and two vinaigrettes.

Each Zalad Platter Brings a Second Platter

Each Zalad platter description carries an “Includes” line. The House, Cobb and Garden platters include a Texas Toast Platter, which Zaxby’s also sells on its own as ten slices of thick-cut toast with garlic spread. The Asian Zensation includes a Veggie Egg Roll Platter.

That means a Zalad platter arrives as a salad course with its bread or egg rolls already on the order. The order form also lets you take toppings off: cucumbers, tomatoes, cheese or fried onions on the House and Garden, bacon and egg as well on the Cobb, and the slaw, wonton strips or egg rolls on the Asian Zensation.

The Chicken Platters Beside It

The chicken platters are the food most guests come for, and Zaxby’s gives them plenty of flavor. The Chicken Fingerz Platter comes with Zax Sauce, in a Regular of 40 or a Large of 60. The Sauced Fingerz, Boneless Wings and Traditional Wings platters are tossed in sauce, with Ranch on the side. The tossing list holds eleven sauces, from Lemon Pepper and Garlic Parmesan to Nashville Hot, Tongue Torch and Nuclear, and the Sauced Fingerz and both wings platters take four sauce picks on the form at nearly every storefront we sampled.

The two Zampler platters put Chicken Fingerz and wings on one tray: 20 Fingerz with 20 Traditional Wings, or 20 Fingerz with 30 Boneless Wings. The Nibblerz Platter is 20 small sandwiches of a Chicken Finger and Zax Sauce on a toasted bun. A Tater Chips Platter with Ranch fills out the table.

Boxed Lunches: The Same Zalads, One for Each Guest

The Boxed Lunches section turns the same food into one box for each guest. The mains are the Signature Sandwich, the Grilled Chicken Sandwich, two to five Chicken Fingerz, two Nibblerz, five Boneless Wings, and the House and Cobb Zalads. The Asian Zensation Zalad box appears at 507 storefronts.

The boxed Zalads keep the chicken choice, one box at a time: Fried, Grilled or Garden. That setting reads the same at 1,010 of the 1,015 storefronts that list the Cobb box and 1,005 of the 1,006 that list the House box. The form then offers two sides, coleslaw or chips, and a chocolate chip cookie, each for an additional charge.

One Order for a Mixed Room

Put the rule to work on the order an office places most, a team lunch.

Start with the chicken. Pick the platter your team would order at the counter: a Chicken Fingerz Platter with Zax Sauce, or a Zampler if the room likes wings too.

Add a Zalad platter set to both. A House or Cobb Zalad with Chicken Fingerz and Grilled Fillets gives the grilled-chicken guests their plate. Spread the five dressings across the table, and the Texas Toast comes with it.

Add a Garden Zalad if some guests skip chicken. If the room is mostly salad eaters, a second Zalad platter set to All Grilled Fillets does more than a second chicken platter.
