They’re refugees who arrived in America without a dime to their name, Fortune 500 company execs who left their lucrative jobs to pursue a labor of love or former engineers who dream of starting the next Chipotle.

These are people like Fumie Ito, a self-taught chef and mother of three who runs a successful, one-woman catering company called Sweet and Natural.
