Most offices reach for this filter once a year, on one lunch, in February. That is the smallest thing it does.

The same roster covers the morning spread before an eight o’clock all-hands. It covers the boxed lunch day, when everyone eats at a desk. It covers the buffet for a headcount that outgrew boxes, the appetizer table on a Thursday, and the dessert drop a birthday needs and nothing else.

None of that is an occasion. It is an ordinary quarter of office food, and turning the filter on does not shorten the menu.

How to make Black-owned catering the default order: a saved filter, not a February search

Treat it as a setting rather than a search. Switch it on once, then order the way you already order.

Almost nothing about the work changes. A themed lunch out of this roster lands where every themed lunch lands, $12 to $20 per person. What to settle before you hand a caterer a format: packaging, hot holding, and the delivery window

Not every kitchen runs every format, and none of this sits on the menu page. Four things to settle up front:

  • Individual packaging. Does the kitchen seal and label each meal, or send trays for you to plate? The label matters more than the box.
  • Hot holding. Chafers, fuel and utensils are sometimes included and sometimes rented. A buffet without them is a table of food going cold.
  • Headcount ceiling. A restaurant that caters easily at forty may want extra notice at a hundred and twenty.
  • Delivery window. A small kitchen may take Tuesdays and not Thursdays, and its radius is often tighter than the map suggests.

When to book Black-owned catering: February wants weeks, most other months want days

February concentrates a year of requests into four weeks, and the good dates go early.

The remaining months look nothing like that. A shop that was full in February has open weeks in May, and an order that needed planning in winter often needs a day or two in spring. Can a Black-owned caterer handle a buffet for 100 people?
